I've been making salsa from scratch since I was a kid. So here's what I've got!

I roast tomatoes, garlic, jalapenos and bell peppers, mix those in with the fresh onions, cilantro. a little more fresh garlic all salted, chop is pretty rough, and cook it all together a bit, finishing off with two limes worth.

    Real simple salsa.
    Roast for 20 mins (I use broil)
    15 tomatoes (give them a slice facing up)
    3 jalapenos (halved and with/without seeds for desired spicy)
    2 red bell peppers (halved)
    A bulb of garlic (whole, peeled cloves)
    ——
    While roasting;
    Dice 3 onions,
    Chop up a bunch of cilantro
    Put in pot, salt to desired to pull out onion juice
    A few cloves fresh garlic
    Squeeze in lime juice

    When roasted, make sure the juice/oils in pan are included and dice
    Tomatoes
    Jalapenos
    Garlic
    Red bells

    Add to pot, bring to heat, simmer for about 45 to an hour, chill and serve
