    Some of my favorite yakitori! I haven’t caught any at the grocery yet, I’d like to smoke some and finish with a braise, see if I can soften them up a bit. Texture is interesting to say the least

    We were taught to eat them by making them unattainable, we saved them for dad, he always made such a big deal about how good and special they were that when we finally got them it was magical.

    I don’t do hearts but give me some chicken livers that were soaked in buttermilk overnight, cornbread battered and then fried and I’m in heaven.

    My roommate has an outright ban on them. Can’t make ’em or bring them in the house from the catfish shack across town.

    I grew up on these as a kid. They were very cheap protein. They came with livers and gizzards. Haven’t seen them in stores as an adult, though

    Generally don’t like the idea of eating organs, but the way you presented this looks so good. bet if you told them it was some other muscle nobody would even care. I don’t even have a reason to dislike organs, it’s just a feeling.

    Do you marinade them? And clean them? When I prepare heart, chicken/ beef you have to open it up and wash out the gunk that stays inside. Beef heart is the best it tastes like veal.

  14. Beef heart is incredibly good too. Had a Peruvian friend cook them and was thinking “Why would anyone eat that?” but tried one and ever since I’m a believer. Order them every time I’m in Peru.

  15. Fried some up thinking “only another muscle*, they looked great, smelled amazing but I almost threw up after my first bite. The chewy weird texture was faaar too off-putting.

    Curry fried hearts and gizzards-Delicious! I always cook turkey gizzard in broth with herbs and eat them for lunch on Thanksgiving. My wife loves the liver and I get the heart. I love the texture and flavor! Been eating these since a little kid( my dad made them-my mom hated them). When I was growing up (1960s and 70s) you could get a quart of hearts and livers for a fraction of the cost of chicken. Now they are more expensive than the rest of the chicken.
    P.S. I also love scrapple and head cheese 😎

  20. My parents took me to a restaurant in central Illinois back in the 1960’s. Deep fried battered chicken livers and raviolis with a spaghetti meat sauce was a menu item. Man were they good.

    Just looked up the restaurant. Still there and still have chicken livers. Sixty years later! Lacon Il.

    Chicken hearts are one of my favorites!!! Charred up? Hell yeah! I once found four hearts and two livers in a whole chicken I was cooking. Happy day for the chef!

    I love chicken hearts, they’re even good lightly boiled or steamed, and I eat them with a spread of different sauces/flavoring, such as scallion ginger oil, plain sea salt with some white pepper and pinch of msg, chili crisp mixed with soy sauce and a few drops of Chinese black vinegar, even some tajin mixed with a little salt, and have a bowl of rice on the side with a cold beer and it’s a great lunch lol

    Maybe they just assume they’d be like gizzards. Hearts are tender and delicious. Those look great.
