INGREDIENTS:
– 500 g green beans, trimmed and halved
– 1 large onion, finely diced
– 3–4 garlic cloves, sliced
– 4 tbsp olive oil (extra virgin)
– 1 can (400 g) crushed tomatoes (or 4–5 ripe tomatoes, peeled and chopped)
– 2 tbsp tomato paste
– ½ tsp ground cinnamon (optional)
– Salt and black pepper, to taste
– ½ cup water (or as needed)
– Juice of ½ lemon
– Fresh parsley, chopped (to serve)
SERVING SUGGESTIONS:
– Scoop up with warm flatbreads
– Pair with rice for a light vegan meal
– Add to a mezze spread with lamb kofta
