Today we’re making a high-protein Moroccan Apricot Chicken Salad that’s flavorful, soft-textured, and nutrient-packed.

📝 Ingredients:
– 2 chicken breasts
– ¼ cup no-sugar-added apricot spread
– ¼ cup shallot
– ½ cup cilantro
– ½ cup olives
– Zest and juice of ½ lemon
– 8 oz Greek yogurt
– 2 tsp Moroccan seasoning (or blend of cumin, cinnamon, paprika, ginger, garlic, turmeric, coriander)

👨‍🍳 Steps:
+ Dice chicken, mix with yogurt + spices
+ Cook thoroughly and pulse to shred
+ Pulse shallot, cilantro, olives
+ Combine all ingredients in a bowl and mix
