My sister's favorite dessert from childhood out of our grandmother's collection of recipes. She had a small binder rather than a recipe box. What I could decipher is typed below. I included photo so if I got it wrong others can fix.

Ingredients: 1 cup maple or brown sugar, 2 eggs, 1/4 cup flour, a cup and a half of milk, touch vanilla and salt.
*heat sugar and milk in double boiler.
*mix flour with another 1/2 cup milk to smooth
*add beaten egg yolks to the flour mix
*add resulting mix into the double boiler slowly
*once hot mix thickens, stir in whipped egg whites.
(Just gentle fold in)

    I lurve maple too. But sugar is hard to source. Wonder what I would need to sub syrup.

    Did all the women’s handwriting of that era look the same? Looks just like my grandmothers handwriting and that of both of her sister’s.

    I guess the frothed egg whites is what makes it foamy?

    #Foamy Maple Pudding
    yield 1 qt

    1 c maple or brown sugar
    1½ c milk
    2 eggs
    ¼ c flour
    ½ c milk

    For 1½x recipe — 2¼ c milk
    1½ c sugar
    ¾ c milk
    ⅜ c flour
    3 eggs

    Heat sugar + 1½ milk in double boiler. Mix flour + ½ c milk smooth, add beaten yolks + stif into hot liquid slowly. When thick add beaten whites. Serve with cream.

    Add a little salt + vanilla improves flavor.

    Interesting! My mom used to make a slightly fluffy tapioca pudding in a similar way. Bet this would be even better with the maple sugar flavor.

    All I needed to see was maple & I was hooked.

    The recipe is a bit rough around the edges as it skips over a few things like tempering the yolks & beating the egg whites to what stiffness stage. But that’s no problem for Reddit old recipes folks.

    I love maple syrup. & buy it by the gallon.

    What used to be called B grade is my go to, a dark syrup & has a deep maple flavor.

    My favorite sugerhouse to visit is Sugarbush Farm in Woodstock VT. Great maple syrup & farm made cheddar cheeses.

    The location is very peaceful and scenic. No traffic on their long road up to the farm.
