I made u/Marozzo_espa's cake from a few days ago for our wedding anniversary yesterday. It seemed like perfect timing as he loves strawberry and we had just bought the pistachio butter.
The only change I made was to reduce the sugar ( 75g to 50gr) in the pistachio layer as the butter is already sweet and drizzle of pistachio cream for garnish. Solid recipe!
When I make it again there are a couple of things I'll try to remember to do.

Sieve the seeds out of the berries before adding gelatin ( had some frothing in the gelee layer )

Use proper baking acetate for the collar.

Find a way to add some crunch for texture. I didn't have any whole pistachios for garnish and that would help.

I can definitely see myself making this again!
