The Luxury Dining Series Spotlights Historic Cuisine at The Ritz-Carlton, Bangkok

BANGKOK’S POSITION AS an international fine dining destination par excellence makes it the ideal location for the finale of Marriott International’s beloved Luxury Dining Series.

With a theme of ‘Forgotten Flavors’ for 2025, the series has travelled to seven destinations known for their affinity with the culinary arts, including The St. Regis Osaka, JW Marriott Jeju Resort & Spa, JW Marriott Bengaluru Prestige Golfshire Resort & Spa, The Ritz-Carlton, Perth, The St. Regis Singapore, and The St. Regis Jakarta before culminating in Thailand at The Ritz-Carlton, Bangkok.

The event is inspired by Marriott International’s comprehensive research into global food and drink habits. Compiled into the Future of Food 2025 Report, data revealed that APAC has an eye-catching 37.8% share of the global culinary tourism market, with projected growth to USD6.2 trillion by 2033. This surge in foodie tourism —coupled with a global taste for traditional ingredients, recipes and cooking methods — aligns perfectly with the series’ emphasis on reviving culinary heritage through modern innovation.

The Ritz-Carlton, Bangkok’s style of hospitality perfectly suits the mission of the series, combining Thai heritage with contemporary design and character that results in rich, meaningful experiences infused with local culture.

Set to take place from 25 to 28 September, the event will feature an impressive line-up of renowned chefs and mixologists, all gathering at The Ritz-Carlton, Bangkok to present their menus at the property’s bars and restaurants. The programme of epicurean delights begins on 25 and 26 September at Duet by David Toutain. The French maestro will craft an impressive ‘six-hands’ dinner alongside Chef Valentin Fouache and Chef Adam Catterall from the Michelin-starred Roganic in Hong Kong. This is followed by a second collaborative experience on 27 and 28 September, which sees Louise Hong Kong’s Executive Chef Loïc Portalier partner with the Duet team for two evenings of French-meets-Asian fusion fare.

Also on 27 and 28 September at Friends of Lily’s, Chef de Cuisine Sedtapat “Pop” Sukpaisanpongsa combines his artistry with that of Chef Loïc Portalier, Chef Jai of Charmgang, and Chef Tala Bashmi, recognised as MENA’s Best Female Chef by the World’s 50 Best. The collaboration of these incredible talents will combine to deliver a blend of the savoury dishes of the Middle East, with the contrasting flavours of innovative Thai cuisine, and the technique of French cuisine for an intimate brunch at the salubrious dining room.

For the entirety of the Luxury Dining Series finale, Calēo Bar will offer a chocolate, afternoon tea experience, features beans sourced from some of the most remarkable cacao regions around the globe. Inside The Chocolate Room, guests receive hands-on education about how the beans become confections via guided tastings, live demonstrations and immersive storytelling.

Calēo Bar, led by Bar and Beverage Manager Ewen Ledan, is the setting for two nights of innovative cocktails and drinks on 25 and 26 September that pair Head Bartender of the American Bar at London’s The Savoy, Angelo Sparvoli, with Hong Kong mixologist Simone Rossi, inventor of the charming cherry-flavoured aperitif Ratafia Rossi.
