What is Molokhia plant called in English?
Jute Plant or Jews Mallow
The English word for Molokhia is
“Jew’s Mallow” or sometimes called “ Jute’s mallow”
Most English speakers would have no idea what “Jew’s mallow” is (particularly since Central and Eastern European Jews don’t typically eat it either).
The word “jute” is sometimes heard but the average English speaker won’t know much about the plant at all. They’ll just say “that’s some sort of plant, isn’t it?”
My recommendation?
Just call molokhia by its Arabic name “molokhia”, and briefly explain that it’s a green leafy vegetable used in Lebanon & Arabic countries cooking, and leave the matter at that.
𝑺𝒕𝒐𝒄𝒌
2 lamb shanks, 750g & 1.5kg chicken,
2 tsp salt, 1 tsp peppercorns
1 tsp whole cloves, 1-2 green cardamom pods, 1 cinnamon stick, 2 bay leaves, 1 lemon/lime halved, 1 onion halved, 30g parsley, 2 carrots chunks, 4 thyme sprigs
2 celery sticks chunks,
5 ltrs water
𝑴𝒐𝒍𝒐𝒌𝒉𝒊𝒂
2 x 400g frozen molokhia
Or 5 bunches fresh, leaves only & sliced
2 large onions finely diced
1 whole garlic bulb, crushed
1 tsp each allspice & cinnamon
1/2 tsp nutmeg, 2 tsp ground coriander
1 large bunch coriander, finely chopped
Juice of 3 lemons, 4-8 cups of stock & salt
𝑶𝒏𝒊𝒐𝒏 𝑹𝒆𝒍𝒊𝒔𝒉
2 large red onions, finely diced
350ml red wine vinegar
𝑹𝒊𝒄𝒆
1 cup basmati rice
1 tbsp flavourless oil
1 tsp salt
2 cups hot water
2 Arabic flatbreads/ pitta breads, cubed & toasted
🥘Wash lamb & chicken – place in large pot. Add 2 tbsp salt & 5 ltr water. On high heat, you will see froth on surface, remove froth using spoon.
🥗Once majority of froth removed, add rest of stock items: veg, herbs & spices. Boil then simmer 45 mins for chicken, remove chicken, leave lamb to continue cooking on simmer 1 hour. Remove when ready. Keep stock aside.
🧅Whilst stock is cooking, place red onions & vinegar in bowl & set aside to pickle.
🍚Wash & pre-soak rice – needs at least 30 mins. Add 1 tbsp oil in pan, over medium heat, add drained rice, 1 tsp salt, 2 cups hot water. Cover & simmer for 5-15 mins until water absorbed.
🧄In another pan, add 2 tbsp oil, over medium heat, add onions & garlic & fry 5 mins until soft. Add coriander stalks & cook 2 mins. Add spices & salt.
🍲Add 4-8 cups stock depending on how thick molokhia, (use a sieve) – we put 4 cups, simmer 15 mins.
🌿Next, add coriander leaves then frozen molokhia blocks & simmer 20mins. For fresh Molokhia, add after coriander then simmer 5 mins, NO MORE – turn off heat, add lemon juice.
🫓 Toast flatbreads or pitta – use airfryer/grill/oven, cut in cubes & place in bowl to cool
✅To serve – Start with a layer of bread, rice, chicken, lamb, molokhia & stock, topped with onion pickle.
