Today I’m going to make grilled shrimp with basil lemon pesto. This recipe brings together smoky grilled shrimp with a bright herby basil lemon pesto. A perfect light summer dish that’s elegant yet super simple to make. Ingredients for the shrimp. 500 grain one large shrimp peeled and de veained. Tails on optional. Two tbsp olive oil. Two garlic cloves minced. One tsp smoked paprika salt and pepper to taste. For the basil, lemon pesto. One cup fresh basil leaves. Two tbsp fresh lemon juice. One tsp lemon zest. One small garlic clove. One or four cup extra virgin olive oil. Salt and pepper to taste. Optional garnish. Extra basil leaves. Lemon wedges. Step-by-step instructions. Step one. Prepare the shrimp. In a bowl, combine shrimp with olive oil, minced garlic, smoked paprika, salt, and pepper. Toss well to coat. Then set aside to marinate for 15 20 minutes. Step two, make the basil lemon pesto. In a blender or food processor, add basil leaves, lemon juice, zest, garlic, olive oil, salt, and pepper. Blend until smooth and vibrant green. Taste and adjust with more lemon or salt if needed. Step three, grill the shrimp preheat grill or grill pan to mediumigh heat. Thread shrimp onto skewers if using for easier grilling. Cook for two two to three minutes per side until pink, opaque, and slightly charred. Step four, assemble and finish transfer the grilled shrimp to a platter. Spoon or drizzle basil lemon pistwe generously over the top. Garnish with extra basil and lemon wedges. Step five, serve and enjoy. Serve immediately with warm crusty bread, over pasta, or alongside a fresh summer salad. Serving suggestion: Pair this dish with a crisp white wine or sparkling water with lemon for the ultimate refreshing summer meal. Thank you for watching Moya channel.
