OMG this bread was so fluffy and good! I used some leftover bottled beer cause I’m not a big beer drinker and wanted to get rid of it. It was so easy…swapped the water for beer!
400g bread flour
264g beer of choice (I used Sapporo)
94g peak starter
10g honey
8g salt
Mix all ingredients and rest 1 hour. 3 stretch and folds every 30 minutes. Did 2 coil folds later. BF total 8 hours. Pre shape and rested 20mins. Final shape and popped in banneton (WOOD PULP IS A GAME CHANGER). CP overnight. Baked in preheated Dutch oven at 450 covered 20 mins, uncovered 25 minutes.
