Had my first Braai (grill party) ever for 12 adults and 3 kids no less. Took me in total 2hrs ish to fix all these.
2lbs chuck roast, marinated in red wine vinegar, garlic and ketchup for 24 hrs – not my favorite marinade. A bit too much on the done side for my liking, but still can’t believe I could use this cut of meat and make it juicy and tender. Might try reverse searing next time.
Pollo Asado (Grilled chicken with achiote marinade) – turns out super juicy and flavorful. Skin is not seared enough, could’ve been more patient and waited for the grill longer. Lesson learned. (I know it’s Mexican, don’t flame me for it, trying new recipes!)
Garlic and herbs chipolata & smoked paprika dry rub pork chops – glad I didn’t under/overcook these two, cooked perfectly. Probably (for me) the trickiest to get just right. Still learning.
Eggplant, mushroom, bell pepper, red onion, halloumi, and shrimp skewers with garlic herb oil + corn on the cobs – this ones are probably the hardest to screw up.
Roosterkoek (Grilled bread) – I’m not a big big fan of bread but I LOVE this. Crispy on the outside, fluffy on the inside. This when warm? 🤤🤤
What else should I try ‘Braai-ing’ next? Any challenge from my fellow SAs? 🇿🇦
