Did a salt and sugar cure on the salmon. Rice was mixed with some rice wine, salt, and sugar. Was a little too much rice. Maybe need to use 3/4 of what was used but I’m pretty proud of it!

Forgot to take a picture but I also did some sashimi cuts!

Was a hit with the guests and got cleared pretty quick!

  1. I’d eat it! The stripes look good. My only critical feedback is to use less rice for each piece. The piece in the bottom left is overflowing with rice. 🙂 I like the fish being able to almost wrap under the rice portion and tuck it in to be able to eat it in one bite.

    Looks good. Add a tiny garnish on top. Scallions, jalapeños, something thatll pop etc.

    Everyone is saying less rice, and technically they are right, but I sometimes make mine the same way you have here. The rice is my favorite part.

    The salmon sushi looks neatly made, and it’s great you’re experimenting with cures and rice mixes. Guests clearing them fast shows they’re tasty–keep refining the craft
