π Greek Lemon Soup (Avgolemono) Recipe
Ingredients
2 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
6 cups chicken broth (low sodium preferred)
1 cup cooked chicken (shredded, rotisserie works great)
Β½ cup orzo (or rice, if you prefer)
3 large eggs
2 lemons (juice + zest)
1 tsp dried oregano (or fresh dill for garnish)
Salt + pepper, to taste
Instructions
1. SautΓ© base β In a large pot, heat olive oil over medium heat. Add onion and cook until softened (about 5 minutes). Stir in garlic for 1 minute.
2. Cook orzo β Pour in chicken broth and bring to a boil. Add orzo and cook until tender (8β10 minutes).
3. Prepare lemon-egg mixture β In a bowl, whisk together eggs and lemon juice until smooth.
4. Temper the eggs β Slowly ladle 1 cup of hot broth into the egg-lemon mixture, whisking constantly (this prevents curdling).
5. Combine β Reduce soup heat to low. Stir the tempered egg mixture back into the pot, creating a silky, creamy broth.
6. Add chicken β Stir in shredded chicken, season with salt, pepper, and oregano. Warm through (do not boil).
7. Serve β Ladle into bowls, garnish with lemon zest and fresh dill if desired. Enjoy!
