Anybody else like peaches in their salsa?

    Peach-o de Gallo

    3 Roma tomatoes — diced

    1 ripe peach — peeled or unpeeled, diced small

    ½ medium red or white onion — diced

    1 jalapeño or serrano — minced (remove seeds for less heat)

    ½ cup cilantro — chopped

    Juice of 1 lime

    Salt — ~½ tsp, adjust to taste

    Dice everything evenly so each bite has a balance then fold peach in gently at the end so it stays intact. Let rest 10 min before serving to let flavors meld.

    You can definitely put that on a slice of buttered toast.
    Or tostada ( fried tortilla ) with tuna and mayo.

    Peaches and chamoy (or umeboshi) are my favorite

  6. I made peach salsa the other day. Batch chili’s instead of jalapeño. Added a shot of Cointreau along with the lime juice.
