Have a 5lb chuck roast or a 5lb beef rib plate. Never done either before. Going to toss it on the searwood tomorrow just trying to decide and get the plan laid out.

    What are those dark jelly spots on beef ribs? I had one a few weeks ago and dug it out with a knife while trimming. It’s gross and feels gross.
