    A lot of work here chef.
    I truly think the dish could do with you picking a lane (aka a season; either peas and asparagus, or mushrooms and beetroot) and sticking with it.

    Your pasta work is excellent. It doesn’t need seven garnishes.

    Maybe could use a little editing. The cappelletti are so beautiful on their own, maybe just a brown butter sage would have done it justice so that it would be the star of the dish.

    The sauce looks amazing, but with a less showy pasta.

    It’s like 2 A+ dinners that needed to be separated
