One of the most exciting things about cooking the Mediterranean way is that you can turn something as humble as one can of beans into a satisfying dinner. We’ve got some onion chopped garlic, celery, and carrots. Diced tomatoes from a can, parsley, pinch of thyme, cinnamon, organ, red pepper flakes, bay leaves. Going in with very large butter beans.
