The easiest way to eat healthy and hit your protein goals is by making marinated salads as part of your meal prep every week. And this week, we’re making a smoky, citrusy, creamy Mexican street cornst. Just combine one can of white beans, one bag of frozen corn, optionally charred in your broiler or with a torch just to bring on that extra level of flavor and the other veggies listed below along with a ton of fresh cilantro. Our dressing is a pretty standard take on a creamy, citrusy elote style, but I like to add in some smoked paprika for an extra layer of flavor. And you can totally swap Greek yogurt for the mayo if you want to get even more protein out of this. Just stir it all together. Fold in some kit cheese. So, you can swap out the mayo for Greek yogurt, but I find if you do that, it just kind of tastes a little sad. So, even adding just some light mayo with that you get on clearance, of course, can really bring it all together. So, it calls for a tablespoon of smoked paprika. And you can really taste it. It’s very smoky, bold flavors, crunchy, and the corn. Ah, corn is underrated. Love corn. Tastes really good, super easy to put together, and you can meal prep it. 9 out of 10. K bye.

  1. Corn: 1 bag frozen or 1.5 cans, optionally charred (you could totally use fresh too) White beans: 1 can, (like navy or great northern)
    Red Bell Pepper: 1/2 to 1 pepper, diced Red onion: 1/4 diced
    Cherry Tomato – 10-12 diced
    Scallion, greens only: 4 stalks piece sliced Cilantro: 1/2 bunch (use your judgement)
    1/4 cup cojita cheese (add more or less to your preference)

    Add dressing to taste, you may end up with extra
    Salt & additional lime juice to taste at end after adding dressing.

    -Smoky Dressing
    1/4 cup mayo or greek yogurt
    Juice from 2 limes
    Smoked Paprika 1 tbsp
    Chili Flakes 1 tbsp
    Salt 3 finger pinch
    2 minced garlic cloves
    1 tbsp of water to thin if needed

  2. One thing I also recommend is to put your dry powder spices into a dry pan on a low medium heat stirring constantly, just until fragrant. A little heat helps a lot to open up the flavors

  5. I don't understand how anybody could eat corn that had been charred with a propane torch. Propane is not a good seasoning for food.

  6. This kinda thing is perfect to eat with any meat of your choice. I prefer steak, but really any meat works. It’s so satisfying

  7. If you dont like certain mayos because they're sweet blueplate and dukes are way less sweet. Good for sauces and stuff too. Little mayo, spicy chili crisp, and honey(i don't use clover dominant or bear honey cause of flavor. Makes a great sweet, spicy, creamy sauce for almost everything.

  8. I just tried this and it's so yummy. Had no white beans and used kidney beans but it's really nice, the smoked paprika is really good!

  9. I've got the soap taste with cilantro. Makes me sad whenever I see it as a key ingredient. What's a good sub (if any)? Parsley?

  11. I tried putting some sweet corn I had in the fridge in my chicken salad today. Wasn't a fan there wasn't enough to balance out the sweet, but I've been having fun experimenting ❤

  12. Yeah I prep similar dishes and use greek yogurt or quark but still mix 50/50 with mayo so it tastes almost as good while going up in protein.
