Coworker brought this for me from her home garden…I love cooking at home but legitimately stumped what to do here.

    Use it to save your favorite hot desk on in-office days. Nobody will dare touch it.

    Make sure to taste test it before you do the work to incorporate it in a dish. When they get that big, they can be very bitter sometimes.

    I have grated zucchini and used it in marinara.

    Gordon Ramsay has a recipe for green shakshuka that is really good and quite simple.

    Roast that and a whole large eggplant add to that 6 cloves of minced garlic, 2 Large diced onions and tablespoon of oregano and a 64 oz can of diced or whole tomatoes. Cook for 2 hours then season to taste and blend. Best tomatoe sauce you will ever have and very very good for you.

    Zucchini bread comes to mind. It’s a 3.6 roentgen kind of thing to make.

    If not bitter…slice thin on mandolin or slicer right into batter the fry! Sea salt, serve giant zucca chips.

  7. I’ve been making saags with my zucchinis this year. Still using leafy greens, but most of the mass is cooked/blended zucchini. It is Deffintly a different consistency, but delicious.

    Oh i know, soup !

    Start by cooking onions, add your diced zucchini, cook for 5-10min, add diced potatoes, soft boil for ~30min then blend, add cream, salt and pepper

    Stick it where the sun don’t shine, in a pickling jar of course, with plenty of good herbs, dill seasoning, maybe a jalepeno for spice. But definitely shove that thing back where it came from, in the dark where it can pickle and mature. Then, you can shove that down your glory hole, your mouth of course to be eaten as wedges slices or chopped.

    Slice in half, scoop out the seeds, stuff with something like ground beef, rice, and tomato sauce, then bake until tender. Top with cheese for the last 10 or 15 minutes.

  14. Cut it lengthside in two, hollow out the soft core and fill it with ground meat, spiced to your liking, thou garlic is a must. Top up with cheese and throw it into a preheated oven at ~160°c for at leat 30min.
    Make some tomato sauce and use the core in it, blend the sauce and you have an amazing family meal..
