Chicken Cacciatore Recipe

Ingredients:
    •    1 whole chicken, cut into pieces
    •    1 cup all-purpose flour (seasoned with salt & pepper)
    •    ½ cooking onion, chopped
    •    1 red, 1 green, and 1 orange bell pepper, sliced
    •    4 tbsp olive oil
    •    2 tbsp butter
    •    ¼ cup Kalamata olives (or black olives)
    •    28 oz crushed tomatoes
    •    ¼ cup Gratsi red wine
    •    3 bay leaves
    •    2 sprigs each of rosemary and oregano
    •    Salt and pepper, to taste

Instructions:
    1.    Season chicken with salt and pepper, then dredge lightly in seasoned flour.
    2.    In a large pan over medium heat, heat olive oil and butter. Sear chicken pieces until golden brown. Remove and set aside.
    3.    Deglaze the pan with red wine. Once evaporated, add onions and bell peppers. Sauté until softened, then add crushed tomatoes and a jarful of water.
    4.    Return the chicken to the pan. Add bay leaves, herbs, olives, and additional water if needed to cover the chicken.
    5.    Season again with salt and pepper. Cover and simmer on low heat for 1 hour until tender.

Serve warm with crusty bread or over pasta.

Okay. And in English, what does a kactori mean? Uh, kachator. It’s um Anders’s chicken. Back in the days, the men in the family used to go hunting. Uhhuh. And the mother used to say, “Bring me a wild chicken today so we can make the sister would be making pasta home and the brother would go hunting and bring a nice chicken, wild chicken.” And this is the way it was prepared. years years ago. All right. So, what are our ingredients? Our ingredients, of course, the main star is the chicken. Okay. Okay. Then then we have the homemade tomato sauce, salt and pepper, of course, beautiful red and orange bell peppers, the olives from our farm, and here we have beautiful herbs. We have the bay leaf from my tree. You can tell that they’re nice and green. I just went to pick them. And rosemary and oregano and basil and onions. I don’t have it here on the table, but we’re going to get them. Yes. Yes. And then a little bit of flour because we’re going to bread our chicken. Yes. We’re going to dust the chicken. I’m going to cut it properly the way it should be. And uh then I’m gonna dust in the flour that it’s going to be seasoned just with salt and pepper. Okay, perfect. And then of course some uh red wine. Oh yes, the red wine. We need that. All right, perfect. So what’s the first step? First of all, I’m going to cut the chicken. All right, so I have a smaller board over here. And this one is my little helper. All right. Okay. So I’m going to put this here for now. Okay. So, I’m going to try my best. I’m going to put the chicken back in there. Okay. So, let’s see. And that’s how we cut the beautiful wings. That’s when I I said that I this is my help. I go like this. And it’s done. And here I just cut a little bit. Let me drain this water. Okay. And we put the chicken in there. And here we have another wing. It’s very easy, you know, to cut up a chicken, but which you can rip I already cut if you don’t want to do this. Mhm. So now I go to the legs. There’s a lot of ways to cut the chicken. Today I’m going this way. You are beautiful. Mhm. No sweat. [Music] And this is the spine. So this I’m just going to make a little cut here. So like that helps to cook faster. And I’m going to leave the skin just because it holds the chicken better. Beautiful. And this one see I’m going to save it for my dogs. I’m going to cook it for them. See that’s the rest of the spine. It’s the neck over here. [Music] And the dogs like it. Oh, they love it. Then I put few meatballs in there. like a real Italian dog. Yeah. And they even say, “Thank you, Nana.” [Music] Okay. Look how easy is to cut the breast. Go right there. [Music] And these are very good chickens. Very tasty. Yeah. Yeah. These are from a local farmer. Yes. Beautiful. Look at that. So now you are seasoning the chicken. Yes. Seasoning the chicken a little bit with salt and pepper. And then we’ll put more after. [Music] And now we go to the stove. You going to mix it first? Yeah, we can mix as we go. We can mix it now. See? Very, very lightly. It’s going to be like this. Okay. Okay. So, a drop of oil. Yeah. Just a little bit. And now we put like a tablespoon of butter. So like that the oil doesn’t burn. Okay. And the problem. I think it’s better if I use my hand. Yeah. As long as you’re washing your hands afterwards, right? Oh, of course. [Music] Then how long are you going to fry it on both sides? Uh, we’re just going to get a nice light golden color. Okay. But we’re not cooking it through because it’s got to cook in the sauce. Right. Exactly. This is just to sear and build more flavors. You can even do it without the flour, but the flour gives more flavor and tenderize the meat too. Okay. See? Beautiful. [Music] Okay. So, we cut cooked it for a couple minutes and now we are going to flip it. Yeah. All right. Let’s see what we got. We’ll see if it the color that we like. What do you think? Looks good to me so far. Look at that. See how beautiful. That’s what you want to see. The beautiful light golden. You know, look at this. All the pieces are just mix. Yeah. And then a couple more minutes with that. Yes. So, while that’s cooking, we’re going to go cut our peppers and onions. Yes. Okay. Let me get it all ready. Okay. We’ll be right back. Okay. Take care. All right. So, now we’re going to cut the onions. We’re going to cut our peppers. Get everything all ready. This is a nice big onion. So, we use half of it. Okay. So, I’m going to do this [Music] So this you’re going to do the full pepper. Yeah, I’m good because they’ll taste amazing and they shrink when you cook them, right? So a little bit. Yes. But I’m going to check in the fridge if I have a a green or a yellow for the colors. All right. It looks like we did have the green pepper. Oh, yeah. I’m just going to use one more piece from here. You see? Beautiful. Mhm. If we had a a white pepper would make an Italian flag. [Music] There you go. Mhm. Now this. And then what are we doing after this? After this, we go back to the stove and we’ll put everything together. Okay. Okay. Follow me. [Music] All right. Now that we cooked it on both sides, you’re going to put it in here. Yes. Just slightly cooked. Yes. Yes. Just get a nice a beautiful color. [Music] And we’re building more flavors. Let’s see this one. [Music] Now I’m going to delaze delaze the pot with some white red wine today. Okay. [Music] Okay. So now what I want to do because I want to use this pot because it’s much deeper. So I’m going to put this in here. That’s all. And we keep going with that now. Okay. Okay. Beautiful. Okay. Now you’re going to start with the onions. Yes. Onions. [Music] Oh, it smells so good. That wine, I can smell it. Beautiful, eh? Mhm. Okay, just for a minute or so. You’re just breaking it all up. Yeah. So good. And this is beautiful like that. And now we have the beautiful peppers. Okay. [Music] That’s what I’m going to salt the peppers now and the onions. Always keep it a little bit because at the end if you need more, you can always put it. Okay. Some black pepper goes really well with this dish. Mix it. Can you smell that? Mhm. We’ll let it go just for a minute or so. Okay. We’ll come back to it. Yeah. [Music] With the homemade sauce going in there. Oh, yeah. Okay. I started with one. Yeah. But I think we need two. Okay. Cuz that’s too thick. So, you did a jar of water. Yeah. Just a little too thick. Yeah. Now we’ll put this beautiful chicken in there. [Music] Those piece of chicken, they’re alling each other. Mhm. See, this is all flavor. Okay. Now, how long do you think to cook for? Uh, this is going to cook at least 45 minutes. Okay. Because again, the chicken is from the farm, so they’re free range and the meat feels like it’s a little bit harder, but has much much more flavor. Okay. You going to put another jar sauce, you said, or no? Um, I don’t think so. No, we’re good. I think we’re good. We just needed to cover it. Okay. And I’m going to put all my beautiful seasoning in there. See? You put some more water. Yeah, because you got to give time to for the chicken to cook. Beautiful. Still beautiful color. Okay. So, here we have now. Let me see what I got. Uh, four beautiful green bay leaf. If you crack them like this a little bit, there’s more flavor that comes out. Okay. So, you put those ones in. Uh I have some beautiful rosemary. I just put it to the corner and oregano. And we’ll put it here. Look how gorgeous. It’s like a painting. Mhm. And you are the artist. No, you are the artist, not me. Okay. So, now we put the basil. You can put anything you like. See? Leave them here. And this I like to put them like that. What do you think, baby? Beautiful. Looks great. Smells great. Now you’re going to put the olives. Yes. And this is another thing that gives beautiful flavor. And again, not everybody has this. If you do, it’s amazing. If you don’t, it’s okay. You can buy the calamar olives which they’re really really tasty. [Music] Okay. And we’ll put some more. Now we’ll put some salt. Do you have homemade bread? Well, cuz of you I do. [Music] Now we’ll mix it all together. Yeah. Nice and gentle. See, you don’t want to disturb it too much. Okay. It’s just perfect. Yep. Now we put the lid. Okay. Uh this one you can have it just like that the way I’m doing it now or you can make a pollenta and you can put this over the panda or you can have steamed rice or mashed potato. You can have whatever you like. It doesn’t matter how you do it that it’s delicious. Yeah, it looks wonderful. I like it with a little bit of toasted bread over here. Yeah. Yeah, you can have your homemade bread. Uh sour dough. Today we have the sour dough. Okay. What do you think, Reena? It looks delicious. Per usual. Okay. This one is a piece from the the breast.
