    2 c heavy cream

    1 c whole milk

    1-2 tbsp dried lavender

    Zest of 1/2-1 lemon

    1/2 c clover honey

    Five egg yolks

    Pinch of salt

    1 tsp vanilla extract

    Heat 1c heavy cream and milk in saucepan. Stir in honey, add lavender and lemon zest and let steep for an hour.

    Heat milk again, whisk egg yolks with salt. Temper the egg yolks with the hot milk, heat on low until custard forms

    Strain into bowl with remaining heavy cream and vanilla. Mix, chill, churn, serve
