    Do yourself a favor and look for Lum’s Char Siu sauce.

    Not kalbi, or Korean for that matter. I’m willing to bet a coconut that if you buy a jar, you will make sure you are never without it again.

    Frankly, Lum’s should put me on the payroll. Or they should just send me a case every year or so.

    Procedure — toss short ribs and sauce in vacuum bag and toss in the freezer unsealed, until the sauce hardens enough that it won’t get sucked out. Seal. Cook the same way you did above (sauce again lightly prior to baking).
