Panzanella is a fantastic cold salad from Italy.
Filled with ripe, juicy tomatoes and crusty bread, this panzanella salad is a delicious summer meal.

Ingredients

1 sourdough or ciabatta bread
1 tbsp olive oil
1 yellow bell pepper
1/2 cumcumber
1 red onion
250g (9 oz) cherry tomatoes
1/2 beef tomato
170g (6 oz) fresh mozzarella
1 handfull fresh basil leaves + a couple leaves for finishing
Salt

Dressing:
60ml extra virgin olive oil
3 tbsp balsamic vinegar
3 garlic cloves, grated
1/2 tsp Dijon mustard
1 tsp honey
1/2 tsp salt
1/4 tsp pepper
