Ingredients
* 240 g all-purpose flour
* 1 Β½ tsp baking soda
* 2 Β½ tsp pumpkin spice mix
* Β½ tsp salt
* 425 g 15 oz
* 150g sugar
* 90 g light brown sugar
* 120 ml unsweetened non-dairy yogurt
* 120 ml avocado oil
* 2 tsp vanilla extract
* 1 cup of semisweet chocolate chips

Instructions:

  • Sift together the flour, pumpkin spice, baking soda and salt. Set aside.
  • In a separate larger bowl whisk together the pumpkin puree, sugars, sugar, yogurt, avocado oil and vanilla extract.
  • Add the dry ingredients into the wet and whisk gently

  • Add in the chocolate chips, don’t over mix

  • Divide the batter evenly with an ice scoop

  • Bake the muffins for about 25-28 mins

    Do pumpkin spice and chocolate go together well? Sounds odd but never tried it

    You could probably switch the vegan yogurt with canned pumpkin or apple sauce as well.

    You left out the pumpkin puree in the recipe. I mean, the amount is there but you don’t say what it is. At first I was like, this is odd: pumpkin spice muffins with no pumpkin! Then I figured it out.
