
Sloppy Joe bowls and chicken and biscuits. I measure by feelings so these ratios are guesstimates.
Sloppy Joe bowl:
1 lbs ground beef browned, fat drained off. Then mix with:
1 small can tomato sauce
3 tbsp ketchup
3 tbsp yellow mustard
1 tbsp brown sugar
1 tsp cinnamon.
Serve with steamed broccoli and sweet potatoes.
Chicken pot pie:
2 cups cooked chicken, shredded
8 Oz mushrooms, sliced
1 small onion, diced
2 stalks celery, diced
2 carrots, diced
2 1/2 cups 2% milk (use whatever milk you want)
1/4 cup flour
1 tbsp thyme (I used fresh)
To taste:
Onion powder
Garlic powder
Salt
Pepper
Biscuits:
2 cups flour
2 tsp baking powder
1/4 cups cold butter
1 cup + 3 tbsp milk (buttermilk preferred)
2 tbsp honey
Preheat oven to 400°F. In a Dutch oven, sautée veggies. Once softened season with spices. Sprinkle flour over the top, mix, and cook flour for a few minutes until brown.
Slowly whisk in milk. Allow to come to low boil, constantly stirring to avoid burning. Cook until thickened (about 7-10 min). Add in thyme and chicken. Mix.
Remove from heat and add add mixture to greased bowls. Top with biscuit dough.
Bake for 15 min or until golden brown.

Eating like a pig on vacation and then regretting it is one of my oldest traditions. It actually predates me, it’s more of a family tradition passed down from generation to generation. Still, I respect your preparation and restraint.
Oh I am totally making that chicken pot pie when the weather gets cooler!
