I’m really excited and hopeful that this habit will stick because I’m very very tired of “kid dinners” 😆 Made two dinners and a week’s worth of lunches and breakfasts. Instant pot beef stew, turkey zucchini patties, spicy tuna cakes, and healthy blueberry muffins. Took me four hours. I hope I’ll get faster 😅

Stew will be served with cheddar bay biscuits first night, and rice the second night. Turkey patties and tuna cakes will go on salad greens with roasted sesame dressing, or in a pita. Might make some garlic couscous or quinoa to go with tomorrow. Muffins are for the kids to grab and eat on the way to school.
