I made these super easy 3-ingredient keto almond butter cookies with just almond butter, sweetener, and an egg – but I later added a little something extra for flavor:

  • 1 tsp baking soda
  • ½ tsp pure vanilla extract
  • 1 cup keto-friendly chocolate chips – highly recommend!

    * 1 cup of no sugar added almond butter 
    * 2/3 cup granulated sweetener, like Swerve or Lakanto
    * 1 large egg
    * 1 teaspoon baking soda (optional)
    * 1/2 teaspoon pure vanilla extract (optional)
    * 1 cup (190g) keto friendly chocolate chips (optional but makes the cookies tastier)

    # Instructions

    1. Gather your ingredients and preheat your oven to 350F.
    2. Then line a cookie sheet with a baking paper.
    3. In a mixing bowl, combine almond butter, sweetener, and egg.
    4. Then add the baking soda and vanilla extract (if using) and mix well. Then fold in the keto chocolate chips (if using) until evenly distributed.
    5. Make sure the dough comes together and is really nice and firm. 
    6. Then shape the mixture into 12 equal balls.
    7. Arrange the balls on the baking sheet and press each with a fork to flatten and create a crisscross pattern. Then chill the cookies for at least 15 minutes.
    8. Bake the cookies for 8 minutes (some ovens may go to 10, but not more than that).
    9. Take the cookies out of the oven and cool for about 20 minutes.
    10. Once cooled, they’ll harden and you can now serve!
