I’m on a mission to make as many salads as I can this summer, and I think I just found my favorite one. This is a Leventine style toasted chickpea salad. The colors here just blow me away. Amazing. It’s crunchy. It’s lemony. It’s seasoned. I could eat a whole bucket of this. When people say they don’t like or care for salads, I’m always confused because genuinely, it’s my favorite part of any meal. And whether you’re from the Levant, Armenia, Turkey, Iran, or even a European country along the Mediterranean, you know that salads from this region are the best in the world because they hit these three categories: freshness, texture, and flavor. First, you have to use good, highquality ingredients. And yes, canned chickpeas count. You need a variety of texture, like the contrast between a bell pepper and tomato. And last, flavor. This is only seasoned with salt and pepper, but the sumac, green onion, parsley, and even olive oil bring such a bright flavor, you don’t need anything else. Focus on these three, and I promise every salad you make will just blow you away. [Music]
