Recipe:
300g chickpeas
200g couscous
200g feta crumbled
1 cucumber diced
1 onion chopped
6-7 peppermint leaves chopped
6-7 parsley leaves chopped
For the dressing:
60g tahini
60g lemon juice
60g olive oil
1 tbsp honey
40g water
1/2 tsp cumin
salt
pepper
I was supposed to put 1 tsp curry powder as well, but I had run out of.
Prepared the chickpeas and couscous first, let them chill, added the cucumber, onion and feta. Then, prepared the dressing, added it on top and finally the parsley and my homegrown peppermint.
It tasted great!
