    If you actually want to smoke that, I’d strongly suggest my sous vide method. 24 hours at 155, and then smoke until you are happy with the crust. Chill in between the sous vide and smoker if you want more time for bark formation.

    I’m a hard core, smoke all night kinda guy but I’ve done these in a crock pot at the track for my crew and it turns out nice. Not sure it’ll be even decent smoked.

    That’s a “brisket.” The MIL’s heart was in the right place. You could smoke that, but let her know that it might not work out all that well because… Thank her for thinking of you, though. And who knows? You might be able to make it work. And have some backup food, too.

    Crock pot with some onions, make some nice gravy from the drippings, and serve with mashed potatoes. (Literally just did this yesterday with a similarly sized brisket.)

    Then buy a brisket and smoke it.

    I’ve not in 40 years ever saw a brisket this small. Perhaps it should be labeled “piece of brisket” but even then. 1 adult could eat that entire thing. Sad day for men all across the USA

    I’d save that to make it like a pot roast in a crock pot and buy a proper brisket for smoking. I think MIL is testing you to see if you’re going to do the correct thing. Haha

    Defrost slowly inside of the package.
    After defrosting remove from the package and place on the counter for 45 minutes.
    Smoke at 185F for 2-3 hours.
    As the oven is preheating to 325 you need to remove the small brisket from the smoker and wrap it in foil (peach paper is better but not necessary)
    Once internal reaches 203f, remove from the oven and place it on the counter for 10-45 minutes

    If you add bbq sauce, do not add it until after you wrap it.

    Throw that into the freezer, then smoke a real brisket for Labor Day.
