Looks delicious! I made meatloaf “cupcakes” once for a potluck – using mini muffin tins for the “cakes” and then I piped on mashed potatoes for the “frosting.” I made them ahead and then popped them under the broiler at the hostesses house to reheat them (and brown the potatoes). It was the first empty tray on the table. 😊
