If you’ve got zucchini growing in your garden might I suggest a new & delicious way to enjoy it? This is so easy and tastes amazing!
You can make as many or as few as you’d like!
Ingredients-
Small or medium zucchini
Tomatos- I used Roma
Fresh Mozzarella
Olive oil
Salt
Garlic Powder
Pesto
Instructions
Cut the stem and the end off of each zucchini and then cut them in half lengthwise
Slice the tomatoes and the mozzarella into thin slices
Brush the cut side of the zucchini with olive oil and then sprinkle it with salt and garlic powder
Preheat the grill or Blackstone and brush with olive oil & set to medium heat
Place the zucchini cut side down and cook for 5 to 10 minutes or until golden brown
Turn the zucchini over and spread on a layer of pesto
Layer the tomato and cheese spices alternating across the top of the zucchini
Close the grill or cover zucchini and continue cooking for another 3-5 minutes or until the cheese is melted and the zucchini is tender
