Let’s start by preparing the sauce 1 small onion, diced 1 large red bell pepper, chopped Remove the seeds and wash the bell pepper 1 large tomato, diced Heat a pan and add 1 tbsp olive oil Sauté the onion for 1 minute Add 1 tbsp minced garlic Cook until the garlic is golden Add the bell pepper and mix well Salt and black pepper to taste Mix and add the tomato Mix again Add 1/4 cup of water Cover and cook for 5 minutes Add 1 cup tomato sauce, stir well Dried herbs and parsley to taste Stir, cover, and cook for another 5 minutes Blend with a mixer or blender and set aside Remove the stems from 2 zucchinis, green and yellow Slice each one using setting 2 on the mandoline 2 large tomatoes, sliced 1 eggplant, sliced In a baking dish, drizzle olive oil and add the sauce Layer zucchini, tomato, eggplant, and yellow squash slices Arrange in a circle as shown in the video Repeat until the dish is full Drizzle with olive oil and add salt to taste A pinch of pepper Cover with parchment paper Parchment paper keeps the veggies moist without getting soggy Bake in a preheated oven at 180°C (350°F) For 25 minutes Remove the paper and bake for another 10 minutes Remove from oven Dried parsley to taste Fresh basil leaves Serve as is or with meat of your choice A delicious, easy, and beautiful dish to make Thanks for watching and see you in the next video!!
