What I find odd in non-kitchen environments is how they don’t have each other’s backs the way my crew does.

in every kitchen i worked there is this one cook who is able to oversleep his shiftstart at 1 pm
One of the best chefs I ever worked under was this hard ass French lady. She took no shit and could walk the walk.
We opened for lunch at 11am, and if a delivery came in after that, she would make the delivery person wait until there weren’t any tickets up to check in and sign the order.
Made some poor guy wait 30 min before she would even look at him, knowing she would probably get him fired if he left. Never came late again tho lol.
I miss/love/hate/admire/envy him all the time.

It saves labor cost.
If I can be late, still accomplish my projects, and at the same time get other people paid… I’ll be late.
Sometimes I come in early to do work. And the next day I come in very late.
The rules aren’t set in stone for how to run a kitchen and make good food.
I’m still a drunk. I just don’t see what that has to do with timing.
Or they’re fucking OVERLY EARLY. How dare someone have FREE TIME and have to go in 2hrs early to receive a delivery just because the driver didn’t plan their route correctly.
