This drives me absolutely nuts. I just take out the weird or bad layer and I’ve never had a problem with eating the rest of the onion. I don’t know why it happens, but my guess is that it’s related to growing conditions—too much water? Someone angered the onion gods that day?

Some bacteria from the soil got under the skin and as the onion grew larger, that one layer got rotted. Still good, just dispose the brown and give it a nice rinse.

Just scrape the one layer off, and wash throughly. Make sure it doesnt smell, if it does thats when id toss it.
