
First time buying fuet iberico. Looks and acts nothing like the other fuets I’ve had. Really tough and veiny when cutting up, had to pull parts off with force. And some slimy liquid came out of it when cutting. Super strange. Should it be this way or did I get a bad batch?

It would help if you did a proper cut to see how the texture actually looks like because there it just looks like you ripped it off ?
Slimy liquid doesn’t sound great but sometimes the fat is a bit wet but if it’s really liquid ? It’s hard to say with this kind of description and that picture.
Small part which is cut properly looks fine but rest of the sausage looks grainy. Personally, I don’t think you are gonna get sick but texture might put you off. Also, my guess is that the liquid part is just fat that’s melted by your body heat.
I haven’t eaten fuet outside of Spain but your picture doesn’t show the vibrant colors and density of the filling I remember, which is exactly what I see here. I don’t recall any liquid spilling. But I also never used anything but a sharpened knife to prepare it.

Only problem I have with this is the rather distinct smell that mirrors the scent of something else I never put in my mouth.
