Made this for lunch today since skinless chicken breast is on sale for $2/lb at Walmart & I was craving artichoke dip. If you already have mayo, it costs @ $12 to make 6-8 servings, depending on serving size. I had most of the ingredients, but looked up the price of them at Walmart.
($4) 2lbs chicken cut into chunks & put into greased 8×8 pan. Sprinkle with seasoning of choice, I use Alpine Touch. It’s garlic, onion, salt, pepper, & MSG
Mix together in bowl:
($2.50) 1 can artichoke hearts, drained
($2) 8 ounce shredded Italian cheese (used half)
($2.50) 6 ounce shredded parmesan (all)
3/4 cup mayo
Maybe a teaspoon of seasoning.
Bake for 45 minutes @ 350.
Meanwhile, cook white rice as normal. I buy it in bulk, but it’s ($1) for 1 lb bag that makes 8-10 servings.
Put a scoop of cooked rice in bowl & a scoop of cooked artichoke chicken. Stir. It’s really rich, so I had steamed zucchini on the side. We grow it so it costs nothing to us, but it’s less than $1/lb at Walmart.
