I hit the Costco lottery and found a smallish wagyu brisket for a great price. Incredibly pleased with the cook!!

Mustard binder, salt, pepper, garlic.
Traeger oak and whiskey pellets
Post oak chips for extra smoke
18 hr cook at 225 for first 10 hrs, 210 for last 8
