The Arkansas Department of Health regulates the sale of food at establishments that include restaurants, bars, day cares, schools, grocery stores, convenience stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspections are made unannounced by environmental health specialists.

DOLLAR GENERAL STORE, 901 S. Blake St. Date of inspection Aug. 25. Observed an accumulation of liquid residue on the bottom of the back refrigerator. Nonfood contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
BROOKLYN’S CHILDCARE CENTER, 1201 University Drive. Date of inspection Aug. 25. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM.
SHELL STOP N SHOP, 5600 S. Olive St. Date of inspection Aug. 26. At least one EMPLOYEE that has supervisory and management responsibility and the authority to direct and control FOOD preparation and service shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. The inside of the microwave is visibly soiled. EQUIPMENT FOOD-CONTACT SURFACES and UTENSILS shall be clean to sight and touch. The microwave was cleaned during the inspection. Observed bags of ice that were packaged in the food establishment not labeled with the establishments information. Food packaged in Retail Food Establishment, shall be labeled as specified in law. Observed boxes of chicken in the walk in cooler and bags of breading in the dry storage area being stored on the floor. Food shall be protected from contamination by storing in a clean dry location where it is not exposed to splash, dust, or other contamination and at least 6 inches above the floor. Food was moved off of the floor and on the shelf during the inspection. Some parts of the floors, walls, and ceilings throughout the kitchen and dry storage area, especially the ceilings near the dry storage area and warewashing area, the walls around the mop sink, and the floors throughout, are unclean. Clean the physical facilities as often as necessary to keep them clean.

EL SOL MEXICAN RESTAURANT, 3801 Camden Road Suite 9. Date of inspection Aug. 26. Food shall be covered/protected to prevent contaminant. Separate raw animal foods during storage, preparation, holding, and display from ready-to-eat food. Food was covered during time of inspection. Observed sugar stored directly on the floor. Food must be stored six inches above the floor to be in compliance with established regulations.
CASA SAMANTHA, 1219 S. Main St. Date of opening inspection Aug. 26. The maximum temperature that the automatic dishwasher cycle reaches on the DishTemp Plate Simulating Dishwasher Tester is 155.2 degrees F. The temperature of the fresh hot water SANITIZING rinse as it enters the manifold may not be more than 90°C (194°F), or less than: (1) For a stationary rack, single temperature machine, 74°C (165°F); or (2) For all other machines, 82°C (180°F). Automatic dishwasher should not be used until it is repaired to read the proper temperature for sanitizing dishes. No test strips observed during the inspection. Test strips must be available and used to test the strength of chemical sanitizing solution. Okay to operate–permit given.
