INGREDIENTS:

8 BOILED EGGS
1/2 CUP OF LIGHT MAYO (YOU CAN ALSO USE NON-FAT GREEK YOGURT OR COTTAGE CHEESE FOR ADDITIONAL PROTEIN)
FRESH DILL
ADOBO SEASONING
BLACK PEPPER
SALT
ONION POWDER
GARLIC POWDER
SMOKED PAPRIKA
GREEN ONIONS (OPTIONAL)
1/2 SMALL YELLOW ONION
CELERY (TO YOUR PREFERENCE)
2-3 TEASPOONS OF WHITE WINE VINEGAR (YOU CAN USE PICKLE JUICE OR DISTILLED VINEGAR)
1 PACKET OF SPLENDA
2 TABLESPOONS OF SWEET RELISH

BOIL WATER FIRST, THEN CAREFULLY ADD THE EGGS. BOIL EGGS FOR 12 MINUTES. PLACE IN ICE BATH UNTIL COOL ENOUGH TO HANDLE.

Hey guys. So today we’re making some egg salad. Please make sure you like, share, comment, and subscribe. Let’s get started with the recipe. So I’m going to start by chopping up half of a yellow onion. I am going to chop the whole thing up, but I’m using the other half for a different recipe, but I’m using my knife saga knives for um this portion of the video. I’m also going to cut up some celery. And this is how much we have. And so next, I’m going to boil some eggs. And so for this recipe, um I’m only using eight eggs, but I did boil extra again for a different recipe. And so for boiled eggs, I like to boil the water first because I noticed that the eggs cook better and it’s easier to get the shell off. I do have this egg timer that I put I can put in here and it tells me when the eggs are hard, but I don’t use this all the time, but it is a neat little tool to have. I think I got it from like Walmart or something like that. And so the eggs are going to boil for about 12 minutes. And once it is done um boiling after 12 minutes, you’re going to turn the heat off. And then you’re going to place your eggs in an ice bath. This part is very, very important cuz it’s going to stop the cooking process. And so, um after I put my eggs in my egg bath, I’m just going to let them cool off a little bit before I start to peel them. And with this method, your eggs should come out perfect. And so, I am going to chop up some fresh dill for this recipe. You can use dry deal if you don’t have access to fresh. Um, but this is going to lighten the dish up quite a bit. And so here are my eggs. And when you’re putting the eggs in the boiled wa boiling water, you want to make sure you put them in carefully. I I forgot to mention that part so that they don’t break in the water. And so again, this uh shell should come off fairly easy um if you boil the water first. And the per the inside will be perfect yellow. Okay, boil it for 12 minutes. And so I’m just going to continue peeling my eggs. And then um I’m going to separate the yolks from the whites. Um and look how perfect it is in the center. Nice and yellow. Um and so again, I’m just going to separate the yolks. And I’m going to place it in the bowl with my celery, onion, and um deal mixture. And the reason I’m separating the yolks is because I’m going to make my dressing for the salad separate from the egg whites. And so I’m just going to chop up the egg whites and then I’m going to mash the the yolks with the celery, onion, and dill and, you know, add my mayonnaise and things like that to help make the dressing for it. And this allows you to taste it without, you know, overmixing it and mushing up everything. And so I am going to season it. And you want, even though it’s eggs, we want to make sure it ain’t bland. Okay? So, I put some salt. I got some black pepper. And you can use as much or as little seasoning as you like. Again, we don’t want no bland food, y’all. Okay? And so, I’m also going to add in some garlic powder, some onion powder. I’m going to add in some adobo, which is an allpurpose seasoning, as well as some smoked paprika. But again, you can use whatever seasonings you want, and you can use as much or as little as you want. Okay. Okay. Next, I’m going to add in maybe about two tablespoons of some sweet relish. You can add in a little bit of the juice of the relish if you um if you want to. I’m also going to add in about a tablespoon of some Dijon mustard. If you don’t have Dijon, you are free to use yellow mustard. And then I’m going to add in a few splashes of this white wine vinegar. Um, you don’t have to. Again, you can just use pickle juice or the juice from the relish or just some regular distilled vinegar. I am going to start by adding maybe about a half a cup of some light mayonnaise. And again, you can use whatever brand of mayonnaise you want. You can use Miracle Whip if you want to. You can use some Greek yogurt if you want additional protein. Or you can use cottage cheese if you want some extra protein. But I’m not putting any of that in there. I’m just going to use this light mayonnaise. And again, you want to taste as you go cuz we don’t want no bland food, y’all. Okay. And so I’m just going to add some more smoked paprika as well as a little bit more of that white wine vinegar. And then I am just going to mix that up. And this is the dressing for our salad. I did add one packet of Splenda just for some sweetness, but you can just use a pinch of sugar if you’d like, but again, we’re trying to keep it low sugar. Okay. And so, um, I’m just going to add in my egg whites to this, uh, egg yolk mixture. And then I’m going to stir it all together. And you want to continue to taste as you go cuz you are adding in the egg white. So, you want to make sure that your seasoning is still on point. But this is it, you guys. This was really, really simple. It’s a really great high protein option, especially if you do like some substitutions with the the Greek yogurt or like some cottage cheese. You can serve this on bread. You can serve it with crackers. You can serve it in like some type of wrap if you want to. You can serve this with some avocado, like avocado toast.
