Chicken Tenders for Kid’s Back-to-School Meal Prep 🍗🎒🏫

My grandma would always pack me rice and dinner leftovers or a hotdog on a bun. My mom would bring me McDonald’s even after she worked a night shift because it was a safe food due to all of my allergies.
Let’s make these honey mustard chicken tenders for the perfect back-to-school lunch! These are packed with flavor, come together so easily, and will be sure to keep any kid happy and full throughout the school day. I used the Original Dry Rub seasoning blend and Honey Mustard and Jalapeño Ranch sauces from @blueshognation to create the perfect recipe every kid will love. My little nephew starts 1st grade this month, and I have to be sure I keep the title of the fun and cool uncle!

Servings: 4
Ingredients:
-8 chicken breast tenderloins
-2 cups corn flakes, crushed
-1 cup flour
-2 whole eggs, whisked
-1 tsp Blues Hog Original Dry Rub seasoning
-Blues Hog Honey Mustard and Jalapeño Ranch for serving
-spray oil for cooking
Instructions:
-add the seasoning into the flour; mix well
-dredge the chicken in the flour, wash in the egg, and then coat in the crushed corn flakes
-place in air fryer basket, spray with oil, and air fry at 400F for 10-12 min
-alternatively, you can also place on a baking sheet with parchment paper and bake at 400F for 18-20 min
-build meals with crackers and fruit of choice
-place dipping sauces in containers

Hey guys, let’s make some healthy and delicious meal prep for the perfect back to school kids lunch. I made these crispy chicken tenders with honey mustard dipping sauce, prepped some veggies with a jalapeno lime ranch, and balanced the meal out with some colorful fruit and fun crackers. Using the Blues Hog seasoning and sauces made this so easy and efficient while bringing so much flavor. Now that my niece and nephews are going back to school this month, I need to keep the title of the fun and cool uncle by making some fun lunches for them. Before I know it, it’ll be time for Marcelo to start school, so this is good practice for his future lunches, too. I simply dredge the chicken with seasoned flour, give them an egg wash, and then generously coat with crushed corn flakes. Finally, I build the meals with some healthy vegetables and fruit and some fun snacks. Be generous with the dipping sauces, and that’s it. Here’s to keeping all kids wellfed and keeping the title of a fun and cool

My favorite lunch that my parents made for me way back when was homemade buns (super fluffy!!) and chili oil… not the healthiest, now that I think about it, but it was super tasty lol
I would’ve loved to have this as a kid! I remember I would complain about my mom’s homemade lunch and instead ask for lunchables😭 but honestly the homemade food always hits different.
