I never liked meatloaf until I tasted this. Yum. Beef and pork seasoning, bread with milk, grated carrot, grated mushroom, chopped shellots, of course, garlic that’s been minced, some oregano or oregano, rosemary, grated pecorino cheese. Add chopped parsley and one whole egg. Mix using your capable hands. Arrange overlapping penetto slices. Grab some of that gold mixture and arrange in a rectangle. Add mozzarella cheese.
