I was always under the impression the impression that Bottarga was made from Mullet roe, not Tuna . You learn something everyday.

(1) The jar – 1.99 on clearance (regular price 12.99) at HEB Central Market
(2) The meal – Pasta con Bottarga with a fresh garlic and parsley butter sauce instead of the traditional garlic butter. I need a pop of herbaceousness with that sauce
(3) Opened jar – has a milder smell than I expected from an ingredient with such a big flavor! WOW
(4) The ingredients for this sauce – I used some curly pasta, but spaghetti is traditional.
(5-9) Making the sauce: Heat butter over medium-low heat and add a clove of fresh grated garlic. Just when the garlic starts to turn, add parsley and lemon zest. When parsley is cooked, add some pasta cooking liquid to make a sauce.
Cook pasta to al-dente, then put it into the pan to finish cooking. When done, put pasta and sauce into a serving bowl.
(10-11) I added the bottarga at the table – 1 tsp. of bottarga was enough to add a big pop of tuna and umami flavor – no Parmesan required.

I’ve never had bottarga – I’ve had an opportunity to have it in restaurants, but the price – 😵
This jar of bottarga was on clearance at HEB Central Market – marked down to 1.99 from the regular price of 12.99.
I got 4 jars- and before anyone squawks, I left 6!
For my first time having bottarga, I decided to make a simple parsley-lemon-garlic butter sauce so I could have the full bottarga favor experience.
All I can say is – WOW. The bottarga added a deep umami and pop of tuna to the bright, herbal pasta sauce. It’s a luxury gourmet experience that is well worth 12.99 – and at 1.99, UNBELIEVABLE!!
11/10 will buy this bottarga again – if I can find it!
