Let’s make a one pot white chocolate raspberry cheesecake with just six ingredients. Start by crushing up two digestive biscuits. Then pour them into a ramkin and mix with melted butter. Then press down gently and set aside. Melt some white chocolate in the microwave in 30 secondond burst, stirring until melted. Then let it cool slightly. In a small mixing bowl, whisk together room temperature cream cheese, icing sugar, and a third of the cooled white chocolate. Then add a small handful of raspberries and fold these in. Scoop it onto your base and smooth it out. Then pour the rest of the white chocolate on top and smooth this out. Give it a shake for a super smooth finish. Decorate with fresh raspberries and freeze-dried raspberries. Then pop it in the fridge for at least an hour to set. Crack through the topping and that’s it. It’s super creamy and so delicious. Enjoy. I think this is one of the best ones I’ve made. Oh my god.
