Carrots are pretty cold hardy. Down to 15°F. And you can reportedly go up a grow zone (+10°F) with a double low tunnel.

It’s kinda fun to battle Mother Nature for that last lettuce or cabbage. Carrots are fun to put out and let them overwinter. Garlic and onions, potatoes can be tucked in with heavy mulch a lot of our areas. Then they just wake up in Spring. It’s crazy.
