Used low sodium spam rubbed with a mix of garlic, paprika, brown sugar and black pepper. Smoked for about 1.5 hours before tossing in my BBQ sauce and a little honey and back on the smoker for another 2 hours or so.

Absolutely will do these again. They were amazing!

    I’ve got a weird mental block with spam. Spent lots of time in Hawaii, where they treat it like real food. I just can’t enjoy canned meat. I’ll eat hot dogs all day long, so I fully acknowledge that I’m being a hypocrite with processed meat, but I just can’t bring myself to enjoy spam… or scrapple.
