Was trying to pull off the grill sooner, got hotter internal temp than expected. Flipped every 60 seconds or so, still turned out better than I expected. I may have put a little too much garlic in the chimichurri, it was overpowering I felt. Steak was delicious!

    You really did this sear on a gas grill? Great job.

    Did you have direct flame or do you have flavorizer bars that block the flame so you only had cast iron grates ?

  5. So you put it in the oven to 111? I do to 125 and sear each side for one min but mine don’t turn out that nice.
