Ingredients
300g Carrots, peeled
1 tsp Whole-grain mustard
1 cup Orange juice
½ tsp Salt
½ tsp Black Pepper
For the Sauce:
2 cups Greek Yoghurt
2 Tbsp Dill, chopped
2 Tbsp Mint, chopped
1/2 tsp Garlic, crushed
½ tsp Salt
For the Pistachio Dukkah:
1/2 cup pistachios, crushed
2 tablespoons fennel seeds
2 tablespoons coriander seeds, crushed
2 tablespoons cumin seeds
2 tablespoons white sesame seeds
½ tsp Sea Salt Flakes
1/4 teaspoon ground Smoked Chilli
Method
Step 1-Add the orange juice, whole grain mustard, salt, and pepper to a pan over medium heat. Give it a stir, and then add the carrots to the pan. Cook for 15 minutes until the carrots are softened but still a little crunchy. If the liquid starts to dry, you can just add a little water to the pan.
Step 2-Make the sauce by adding all of the sauce ingredients to a bowl and mixing them together.
Step 3-To make the dukkah, simply mix the ingredients together and pour them into a sealed jar.
Step 4 – Pour the yoghurt sauce onto a serving plate and spread it around.
Step 5 – Serve the carrots over the sauce and drizzle on any sauce that’s still in the pan. Sprinkle on a little dukkah and serve.
