Today we’re making my go-to orzo salad. Peekaboo. First, cook the orzo and make sure to save some pasta water. And while it’s still warm, add it to a bowl. We’ll add the dressing straight in to save on dishes. So, we’ve got olive oil, oil from the sun-dried tomatoes jar, lemon juice, parsley, and a few spoons of the pasta water, which will stop the orzo sticking together. Here, I’m cutting sundried tomatoes with scissors, which I find easier, along with cucumbers, cherry tomatoes, and red onion. And you guys know I always soak the onions first. And then we’ll finish it off with some feta cheese.
