    Thank you everyone!!! It was ridiculously delicious – I went by [this](https://chezlerevefrancais.com/onion-tarte-tatin/) recipe, but used vidalia onions, brown sugar instead of white, red wine vinegar instead of apple cider vinegar, and added Gruyère cheese! I want to make it again, but next time use apple brandy, sub homemade pie crust for the puff pastry, and actually use fresh thyme (I only had dried). Extra Gruyère grated fresh on top to serve!
